Cooking Instruction for Filled Geese
Useful Tips For Cooking & Serving A Boned & Filled Goose
Before cooking ensure the goose is at room temperature. Set the oven at 200C, 400F or Gas Mark 6. Place the bird in a roasting tin, a trivet or rack is not essential, prick the skin and rub with salt. Cooking time is 2.5 – 3 hours, after the first hour the temperature may be reduced to 190C, 375F or Gas Mark 5. To test if the goose is cooked prick the thighs, if the juices run clear it is cooked, if not return the bird to the oven for another 20 – 30 minutes, then test again. When the bird is cooked, remove from the oven and cover it, rest for 30 minutes before serving. To serve sever the wings from the bird & then slice down as you would a loaf of bread.

A roast goose is the Traditional centre to the Christmas meal providing a rich succulent meat that every one can enjoy. However for some larger families or celebrations where one goose might not be enough we can provide an alternative in the Three Bird Roast,
Poultry or Venison Fillings
This is one of our own geese which we bone out and then fill with our own boned out free range chicken and pheasant. For the more adventurous we can also use locally produced venison for the filling. These birds do not contain any cheaper stuffing and makes an ideal centrepiece for a large family gathering.
